“QUERCIA ORO” is particularly thick (density 1.33\69° brix), it a pleasant sweet note balanced by the right acidity. It is a blend of cooked grape must and wine vinegar. Aged in oak barrels.
“QUERCIA ROSSA” is not too thick (density 1.23\54° brix) and slightly sour. It is a blend of cooked grape must and wine vinegar. Aged in oak barrels.
“BIANCO” balsamic condiment is made with 65% of concentrated white grape must, 35% of white wine vinegar. It’s a young product quickly aged in virgin barrels for balancing the color and taste. The acidity is only 5% that is perfect fresh summer salads.
